Ingredients

  • 2 lb Tomatoes (Skinned / Quartered)
  • 2 tbl Basil
  • 2 tbl Olice Oil
  • 2 tbl Flour
  • 1 tbl Parsley (Chopped)
  • 1 tbl Demerera Sugar
  • 1 tbl Tomato Ketchup
  • 4 Bacon Rashers (Chopped)
  • 2 Garlic Cloves (Crushed)
  • 2 Celery Stalks (Chopped)
  • 1 Onion (Chopped)

Method

  1. Put the tomatoes, crushed garlic, basil, tomato ketchup and parsley in a bowl and combine.
  2. Fry the bacon in a frying pan and then add the onions and celery. Cook until soft.
  3. Now remove from the heat and add the sugar and flour, stirring continuously.
  4. Place back onto heat and gradually add the stock while stirring.
  5. Add the tomoato mixture and stir in well.
  6. Cover and let simmer for 60 minutes.
  7. Pour into a blender and blend until smooth.
  8. Before serving, reheat in the saucepan.
