Tomato Soup Recipe
Ingredients
- 2 lb Tomatoes (Skinned / Quartered)
- 2 tbl Basil
- 2 tbl Olice Oil
- 2 tbl Flour
- 1 tbl Parsley (Chopped)
- 1 tbl Demerera Sugar
- 1 tbl Tomato Ketchup
- 4 Bacon Rashers (Chopped)
- 2 Garlic Cloves (Crushed)
- 2 Celery Stalks (Chopped)
- 1 Onion (Chopped)
Method
- Put the tomatoes, crushed garlic, basil, tomato ketchup and parsley in a bowl and combine.
- Fry the bacon in a frying pan and then add the onions and celery. Cook until soft.
- Now remove from the heat and add the sugar and flour, stirring continuously.
- Place back onto heat and gradually add the stock while stirring.
- Add the tomoato mixture and stir in well.
- Cover and let simmer for 60 minutes.
- Pour into a blender and blend until smooth.
- Before serving, reheat in the saucepan.
