Tomato, Celery And Apple Soup Recipe
Ingredients
- 1 1/2 lb Onions (Chopped)
- 14 oz Cooking Apples (Peeled / Cored / Chopped)
- 5 oz Mayonnaise
- 2 oz Butter
- 1/2 pt Apple Juice
- 1/4 pt Vegetable Stock
- 1 Celery Head (Chopped)
- 2 garlic Cloves (Crushed)
- 2 tins Plum Tomatoes
- Basil Leaves
- Seasoning
Method
- Melt the butter in a pan and cook the onions and celery for 10 minutes.
- Add the crushed garlic and apples, cook for another 5 minutes.
- While stirring, add the plum tomatoes, apple juice and stock.
- Bring to the boil and simmer for about 30 minutes.
- Pour into a food processor and liquidize.
- Then combine the chopped basil leaves, mayonnaise and cream.
- Spoon into soup.
- Serve with fresh bread.
