Ingredients

  • 2 lb Pumpkin (Peeled / Cubed)
  • 2-1/2 pt Vegetable Stock
  • 1-2 pt Milk
  • 1-1/2 oz Butter
  • 2 Onions (Chopped)

Method

  1. Fry the chopped onions with the butter in a saucepan.
  2. Add the cubed pumpkin and stock, cook for about 25 minutes.
  3. Once the pumpkin is tender, pour the mixture into a blender and blend until smooth.
  4. Heat again in the pan before serving to guests.
  5. Serve hot and garnish with chopped parsley and plenty of pouring cream.
