Pumpkin Soup Recipe
Ingredients
- 2 lb Pumpkin (Peeled / Cubed)
- 2-1/2 pt Vegetable Stock
- 1-2 pt Milk
- 1-1/2 oz Butter
- 2 Onions (Chopped)
Method
- Fry the chopped onions with the butter in a saucepan.
- Add the cubed pumpkin and stock, cook for about 25 minutes.
- Once the pumpkin is tender, pour the mixture into a blender and blend until smooth.
- Heat again in the pan before serving to guests.
- Serve hot and garnish with chopped parsley and plenty of pouring cream.
