Ingredients

  • 11 lb Pumpkin (Skinned / Seeded / Cubed)
  • 1 pt Vegetable Stock
  • 1/2 pt Apple Juice
  • 1 tbl Olive Oil
  • 2 Onions (Peeled / Chopped)
  • 2 Baking Apples (Peeled / Cored / Chopped)
  • 2 sprigs Sage
  • 1 clove Garlic (Peeled / Cored)
  • Seasoning

Method

  1. Heat the oil in a large saucepan and add the onions and the garlic.
  2. Cook for 2 minutes and then add the pumpkin, chopped apples and sage.
  3. Cook for another 2 minutes, season well and add the stock and the apple juice.
  4. Bring to the boil and simmer for 15 - 20 minutes until the ingredients are tender.
  5. Liquidise and serve piping hot with crusty bread.
