Ingredients

  • 8 oz Dried Marrowfat Peas
  • 2-1/2 pt Water
  • 1 tbl Oil
  • 2 Celelry Sticks (Chopped)
  • 1 Garlic Clove (Crushed)
  • 1 Onion (Chopped)
  • 1 Sachet Bouquet Garni

Method

  1. Soak the peas overnight.
  2. Heat the oil in a large saucepan and cook the chopped onions until brown.
  3. Add the chopped celery and crushed garlic cloves and cook for about 5 minutes.
  4. Now pour in the peas, water and bouquet garni. Simmmer for about 150 minutes.
  5. Remove the bouquet garni and remove pan from heat.
  6. Pour into a blender and blend until smooth.
  7. Heat again in the pan before serving to guests.
  8. Serve hot and garnish with chopped parsley.
