Parsnip & Apple Soup Recipe

Ingredients

  • 1-1/2 lbs Parsnips
  • 2 pt Vegetable Stock
  • 5 fl oz Single Cream
  • 1 oz Butter
  • 1/2 tsp Dried Sage
  • 1 Cooking Apple (Chopped)
  • 2 Cloves
  • Croutons
  • Parsley
  • Pouring Cream

Method

  1. In a large saucepan over a steady heat, melt the butter and add the parsnips and chopped apples.
  2. Cover and cook gently 10 minutes.
  3. Add the stock, dried sage and cloves.
  4. Let the mixture simmer until the parsnips are soft.
  5. Remove the cloves and dried sage.
  6. Pour into a blender and blend until smooth.
  7. Serve hot.
  8. To finish, garnish with some chopped parsley, croutons and pouring cream.
