Parsnip & Apple Soup Recipe
Ingredients
- 1-1/2 lbs Parsnips
- 2 pt Vegetable Stock
- 5 fl oz Single Cream
- 1 oz Butter
- 1/2 tsp Dried Sage
- 1 Cooking Apple (Chopped)
- 2 Cloves
- Croutons
- Parsley
- Pouring Cream
Method
- In a large saucepan over a steady heat, melt the butter and add the parsnips and chopped apples.
- Cover and cook gently 10 minutes.
- Add the stock, dried sage and cloves.
- Let the mixture simmer until the parsnips are soft.
- Remove the cloves and dried sage.
- Pour into a blender and blend until smooth.
- Serve hot.
- To finish, garnish with some chopped parsley, croutons and pouring cream.
