Minestrone Soup Recipe
Ingredients
- 1-1/2 pt Water
- 4 oz Pasta Twists
- 2 ox Butter
- 2 Bacon Rashers (Chopped)
- 1 Celery Stick (Chopped)
- 1 Carrot (Chopped)
- 1 Garlic Clove (Crushed)
- 1 Onion (Chopped)
- 1 Chicken Stock Cube
- 1 tin Tomatoes
- 1 tin Red Kidney Beans (Drained)
Method
- Fry the chopped onions, garlic, and bacon with the butter in a saucepan.
- Once the onions are soft, add the celery and carrots. Stir well.
- Now add the tinned tomatoes, drained kidney beans, pasta twists, water and chicken stock cube.
- Bring the mixture to the boil, then leave to simmer for 25 minutes.
- Serve piping hot with a sprinkling of parmesan cheese.
