Ingredients

  • 1 lb Leeks (Chopped)
  • 2 pt Vegetable Stock
  • 6 oz Potatoes (Diced)
  • 2 tbl Sunflower Oil
  • 1 Onion (Chopped)
  • 1 Celery Head (Chopped)
  • 1 Bouquet Garni
  • Parsley (Chopped)

Method

  1. Heat the oil in a large saucepan and cook the chopped onions until brown.
  2. Add the chopped celery, potatoes, leeks and parsley and cook for about 10 minutes.
  3. Now pour in the vegetable stock and bouquet garni. Simmmer for about 30 minutes.
  4. Remove the bouquet garni and remove pan from heat.
  5. Pour into a blender and blend until smooth.
  6. Heat again in the pan before serving to guests.
  7. Serve hot and garnish with chopped parsley.
