Green Soup Recipe
Ingredients
- 1 lb Leeks (Chopped)
- 2 pt Vegetable Stock
- 6 oz Potatoes (Diced)
- 2 tbl Sunflower Oil
- 1 Onion (Chopped)
- 1 Celery Head (Chopped)
- 1 Bouquet Garni
- Parsley (Chopped)
Method
- Heat the oil in a large saucepan and cook the chopped onions until brown.
- Add the chopped celery, potatoes, leeks and parsley and cook for about 10 minutes.
- Now pour in the vegetable stock and bouquet garni. Simmmer for about 30 minutes.
- Remove the bouquet garni and remove pan from heat.
- Pour into a blender and blend until smooth.
- Heat again in the pan before serving to guests.
- Serve hot and garnish with chopped parsley.
