French Onion Soup Recipe
Ingredients
- 1-1/2 lbs Onions (Chopped)
- 2-1/2 pt Stock
- 1/2 pt White Wine (Dry)
- 8 oz Gruyere Cheese (Grated)
- 3 oz Butter
- 1 oz Flour
- 1 tsp Sugar
- 1 Garlic Clove (Crushed)
- 1 Loaf (Sliced)
Method
- Fry the chopped onions with the butter, sugar and crushed garlic in a saucepan.
- Cook for about 25 minutes until the onions are brown and soft.
- Dust the onions with flour, stir well.
- Gradually add the dry white wine and stock while stirring.
- Let the mixture simmer gently for about 20 minutes.
- Spread the sliced bread with butter and bake until golden under a grill.
- Once the soup is ready, place a few croutons in ovenproof bowls and pour in soup.
- When the croutons rise to the surface, sprinkle over the cheese and place under a grill to melt.
- Serve piping hot.
