Ingredients

  • 1-1/2 lbs Onions (Chopped)
  • 2-1/2 pt Stock
  • 1/2 pt White Wine (Dry)
  • 8 oz Gruyere Cheese (Grated)
  • 3 oz Butter
  • 1 oz Flour
  • 1 tsp Sugar
  • 1 Garlic Clove (Crushed)
  • 1 Loaf (Sliced)

Method

  1. Fry the chopped onions with the butter, sugar and crushed garlic in a saucepan.
  2. Cook for about 25 minutes until the onions are brown and soft.
  3. Dust the onions with flour, stir well.
  4. Gradually add the dry white wine and stock while stirring.
  5. Let the mixture simmer gently for about 20 minutes.
  6. Spread the sliced bread with butter and bake until golden under a grill.
  7. Once the soup is ready, place a few croutons in ovenproof bowls and pour in soup.
  8. When the croutons rise to the surface, sprinkle over the cheese and place under a grill to melt.
  9. Serve piping hot.
