Carrot Soup Recipe
Ingredients
- 2 lbs Carrots (Diced)
- 1-1/2 pt Water
- 1-1/2 oz Butter
- 4 tbl Milk
- 2 Chicken Stock Cubes
- 1 Onion (Chopped)
Method
- Gently fry the chopped onions with butter in a large saucepan over a steady heat.
- Add the diced carrots, water and stock cubes.
- Let it simmer until the carrots are tender.
- Pour into a blender and blend until smooth and without lumps.
- Put back into the saucepan and pour in the milk, while stirring continuously.
- Serve hot and garnish with chopped parsley.
