Ingredients

  • 2 lbs Carrots (Diced)
  • 1-1/2 pt Water
  • 1-1/2 oz Butter
  • 4 tbl Milk
  • 2 Chicken Stock Cubes
  • 1 Onion (Chopped)

Method

  1. Gently fry the chopped onions with butter in a large saucepan over a steady heat.
  2. Add the diced carrots, water and stock cubes.
  3. Let it simmer until the carrots are tender.
  4. Pour into a blender and blend until smooth and without lumps.
  5. Put back into the saucepan and pour in the milk, while stirring continuously.
  6. Serve hot and garnish with chopped parsley.
