Carrot And Lentil Soup Recipe
Ingredients
- 5 oz Red Lentils
- 5 fl oz Milk
- 1 oz Butter
- 1 3/4 pt Vegetable Stock
- 2 tsp Lemon Juice
- 2 Carrots (Sliced)
- 1 Garlic Clove (Crushed)
- 1 Onion (Chopped)
- Parsley
- Seasoning
Method
- Melt the butter in a large saucepan and fry the onion and garlic for about 5 minutes.
- Add the carrots, celery and lentils and stir for a few minutes.
- Add the vegetable stock, then simmer for about 45 minutes.
- Liquidize in a food processor.
- Return to the saucepan and season to taste.
- Add the lemon juice and milk.
- Sprinkle with parsley while stirring.
- Serve hot with crusty bread.
