Ingredients

  • 5 oz Red Lentils
  • 5 fl oz Milk
  • 1 oz Butter
  • 1 3/4 pt Vegetable Stock
  • 2 tsp Lemon Juice
  • 2 Carrots (Sliced)
  • 1 Garlic Clove (Crushed)
  • 1 Onion (Chopped)
  • Parsley
  • Seasoning

Method

  1. Melt the butter in a large saucepan and fry the onion and garlic for about 5 minutes.
  2. Add the carrots, celery and lentils and stir for a few minutes.
  3. Add the vegetable stock, then simmer for about 45 minutes.
  4. Liquidize in a food processor.
  5. Return to the saucepan and season to taste.
  6. Add the lemon juice and milk.
  7. Sprinkle with parsley while stirring.
  8. Serve hot with crusty bread.
