Broccoli & Parsnip Soup Recipe
Ingredients
- 12 oz Broccoli (Sliced)
- 1 pt Chicken Stock
- 3/4 pt Milk
- 1/2 pt Water
- 1/4 pt Cream
- 1/2 tsp Paprika
- 12 Spring Onions
- 2 Celery Sticks
- 2 Parsnips
Method
- Take a large saucepan and add the water, spring onions, celery sticks and parsnips.
- Bring to the boil, then leave to simmer gently for about 20 minutes.
- Add the broccoli, milk, paprika and chicken stock while stirring.
- Cook the mixture for another 15 minutes.
- Pour into a blender and blend until completely smooth.
- Now put the blended mixture back into the saucepan and heat for a minute or two.
- Gradually stir in the cream.
- Serve piping hot.
