Pork And Pineapple Recipe
Ingredients
- 1 1/4 lb Pork Fillets (Diced)
- 9 oz Butter
- 7 oz Button Mushrooms
- 1/2 pt Water
- 5 tbl Sherry
- 1 tbl Oil
- 1 tbl Cornflour
- 1 tsp Paprika
- 1 tsp Tomato Puree
- 1 carton Double Cream
- 1 tin Pineapple Pieces
- 1 Pork Stock Cube
- 1 Onion (Chopped)
- Seasoning
Method
- heat the oil and butter in a pan, add the pork and fry until brown.
- Remove from the pan, then fry the onion with the paprika for about 3 minutes.
- Blend in the flour and cook for another minute.
- Now add the sherry, stock and tomato puree.
- Let the mixture simmer until thickened.
- Add the pork and season to taste.
- Cover the pan and let it simmer for about 30 minutes.
- Remove from the heat and then add the button mushrooms.
- Then add the cornflour and 2 tbl of water while stirring.
- Bring to the boil for about 2 minutes.
- Just before serving, add the pineapple pieces and double cream.
