Pork And Apricot Casserole Recipe
Ingredients
- 4 lb Lean pork
- 15 oz Chick Peas
- 12 oz Dried Apricots (Halved)
- 2 oz Seasoned Flour
- 1 pt Dry White Wine
- 1 pt Chicken Stock
- 3 tbl Cooking Oil
- 1 tbl Fresh Thyme
- 3 Garlic Cloves (Chopped)
- 2 Cinnamon Sticks
Method
- Coat the pork in seasoned flour.
- Heat the oil in a pan and fry the pork.
- Remove from the pan, set aside and add the rest of the seasoned flour to pan.
- Add the chicken stock and dry white wine.
- Bring to the boil, then add the pork back in.
- Now add the chick peas, dried apricots, thyme, garlic and cinnamon sticks.
- Cover the pan and let it cook for about 50 minutes.
- Remove the cinnamon sticks, season to taste and garnish with some orregano.
- Best served with rice or new potatoes.
