Ingredients

  • 4 lb Lean pork
  • 15 oz Chick Peas
  • 12 oz Dried Apricots (Halved)
  • 2 oz Seasoned Flour
  • 1 pt Dry White Wine
  • 1 pt Chicken Stock
  • 3 tbl Cooking Oil
  • 1 tbl Fresh Thyme
  • 3 Garlic Cloves (Chopped)
  • 2 Cinnamon Sticks

Method

  1. Coat the pork in seasoned flour.
  2. Heat the oil in a pan and fry the pork.
  3. Remove from the pan, set aside and add the rest of the seasoned flour to pan.
  4. Add the chicken stock and dry white wine.
  5. Bring to the boil, then add the pork back in.
  6. Now add the chick peas, dried apricots, thyme, garlic and cinnamon sticks.
  7. Cover the pan and let it cook for about 50 minutes.
  8. Remove the cinnamon sticks, season to taste and garnish with some orregano.
  9. Best served with rice or new potatoes.
