Ingredients

  • 1 1/2 lb Pork Pieces
  • 14 oz Tomatoes
  • 4 oz Button Mushroom
  • 1 oz Pork Dripping
  • 1 oz Flour
  • 2 tbl Vinegar
  • 2 tbl Sugar
  • 1 tbl Worchestershire Sauce
  • 1 1/2 tsp Salt
  • 1 tsp Ground Ginger
  • 1/4 tsp Tobasco Sauce
  • 2 Garlic Cloves (Chopped)
  • 1 Bay Leaf

Method

  1. Take a large mixing bowl and combine the seasoning, flour and ginger.
  2. Then toss the pork pieces in the flour mix.
  3. Put the pork dripping in a pan and fry the pork pieces until brown.
  4. Transfer into a casserole dish.
  5. Using another mixing bowl, combine the tomatoes, Worchestershire sauce, vinegar, bay leaf, tabasco sauce, button mushrooms, sugar and garlic.
  6. Pour over the meat in the casserole.
  7. Cover and place in an oven.
  8. Cook for 2 hours at 325°.
  9. Once cooked, remove the bay leaf.
  10. Serve with rice and vegetables.
