Cider Pork With Spring Vegetables Recipe
Ingredients
- 2 lb Shoulder Pork (Cubed)
- 8 oz Eating Apples (Cored / Sliced)
- 7 oz Onions (Chopped)
- 4 oz French Beans
- 4 oz Asparagus Tips
- 4 oz Mangetout
- 1/2 pt Dry Cider
- 1/2 pt Chicken Stock
- 3 tbl Olive Oil
- 1 tbl Plain Flour
- 1 tbl Cider Vinegar
- 2 bunches Spring Onions
- Seasoning
Method
- Add the oil to a pan and fry the apples over a steady heat.
- Drain and set them aside for later.
- Add the pork pieces to the pan and fry until browned, then set aside.
- Cook the onions in the pan until browned.
- Then add the flour and cider, blend until smooth.
- Cook until reduced by about half.
- Add the pork, onions and sauce to a casserole.
- Cover and cook at 350° for about an hour.
- About 15 minutes before cooked, add the apples.
- Meanwhile prepare and cook the green vegetables.
- Lable the pork and sauce onto a plate.
- Then add the green vegetables as a side portion.
