Duck Liver Pate Recipe
Ingredients
- 12 oz Duck Liver
- 2 cups Double Cream
- 1 cup Milk
- 2 tsp Salt
- 3/4 tsp Black Pepper (Ground)
- 1 Star Anise
Method
- Place the duck liver in a bowl and cover with milk. Soak for 120 minutes.
- Now lift the duck liver out and rinse under cold water.
- Take a small saucepan over a medium heat and boil the star anise, salt and double cream.
- Turn the heat down and leave to simmer for 5 minutes.
- Remove the star anise.
- Put the duck liver in a blender and whisk while gradually adding the double cream mixture.
- After the mixture has become smooth, add the ground black pepper and whisk again.
- Spoon the mixture into a deep dish and cover.
- Refridgerate overnight before serving.
