Duck Liver Pate Recipe

Ingredients

  • 12 oz Duck Liver
  • 2 cups Double Cream
  • 1 cup Milk
  • 2 tsp Salt
  • 3/4 tsp Black Pepper (Ground)
  • 1 Star Anise

Method

  1. Place the duck liver in a bowl and cover with milk. Soak for 120 minutes.
  2. Now lift the duck liver out and rinse under cold water.
  3. Take a small saucepan over a medium heat and boil the star anise, salt and double cream.
  4. Turn the heat down and leave to simmer for 5 minutes.
  5. Remove the star anise.
  6. Put the duck liver in a blender and whisk while gradually adding the double cream mixture.
  7. After the mixture has become smooth, add the ground black pepper and whisk again.
  8. Spoon the mixture into a deep dish and cover.
  9. Refridgerate overnight before serving.
