Ingredients

  • 12 oz Plain Flour
  • 8 oz Caster Sugar
  • 4 oz Rhubarb (Cubed)
  • 4 oz Butter (Softened)
  • 1 oz Granulated Sugar
  • 1/2 pt Natural Yoghurt
  • 2 tsp Ginger (Ground)
  • 1 tsp Bicarbonate of Soda
  • 2 Eggs (Beaten)
  • 2 Orange Zests

Method

  1. In a small saucepan over a medium heat, add the rhubarb, sugar and water. Poach until rhubarb softens.
  2. Lift rhubarb out of saucepan and drain.
  3. Sift the bicarbonate of soda, flour, caster sugar and ginger into a bowl.
  4. Take a separate bowl and combine the butter, eggs and yoghurt.
  5. Add the 2 mixes to the rhubarb and mix thoroughly.
  6. Put an even amount into 12 muffin cases.
  7. Place in an oven preheated to 400 F and bake for about 30 minutes or until browned.
