Rhubarb Orange and Ginger Muffins Recipe
Ingredients
- 12 oz Plain Flour
- 8 oz Caster Sugar
- 4 oz Rhubarb (Cubed)
- 4 oz Butter (Softened)
- 1 oz Granulated Sugar
- 1/2 pt Natural Yoghurt
- 2 tsp Ginger (Ground)
- 1 tsp Bicarbonate of Soda
- 2 Eggs (Beaten)
- 2 Orange Zests
Method
- In a small saucepan over a medium heat, add the rhubarb, sugar and water. Poach until rhubarb softens.
- Lift rhubarb out of saucepan and drain.
- Sift the bicarbonate of soda, flour, caster sugar and ginger into a bowl.
- Take a separate bowl and combine the butter, eggs and yoghurt.
- Add the 2 mixes to the rhubarb and mix thoroughly.
- Put an even amount into 12 muffin cases.
- Place in an oven preheated to 400 F and bake for about 30 minutes or until browned.
