Plum and Ginger Muffins Recipe

Ingredients

  • 12 oz Plain Flour
  • 8 oz Brown Sugar
  • 4 oz Plums (Stoned)
  • 4 oz Butter (Melted)
  • 1/2 pt Natural Yoghurt
  • 1 tsp Bicarbonate of Soda
  • 1 tsp Ginger (Ground)
  • 2 Eggs (Beaten)
  • 2 Ginger Stems (Chopped)

Method

  1. Sift the bicarbonate of soda, flour, brown sugar and ginger into a bowl.
  2. Take a separate bowl and combine the butter, yoghurt and eggs.
  3. While stirring continuously, add the stem ginger and plums.
  4. Combine the 2 mixes until smooth.
  5. Divide the mixture evenly into your muffin cases.
  6. Place in an oven preheated to 400 F and bake for about 30 minutes.
