Plum and Ginger Muffins Recipe
Ingredients
- 12 oz Plain Flour
- 8 oz Brown Sugar
- 4 oz Plums (Stoned)
- 4 oz Butter (Melted)
- 1/2 pt Natural Yoghurt
- 1 tsp Bicarbonate of Soda
- 1 tsp Ginger (Ground)
- 2 Eggs (Beaten)
- 2 Ginger Stems (Chopped)
Method
- Sift the bicarbonate of soda, flour, brown sugar and ginger into a bowl.
- Take a separate bowl and combine the butter, yoghurt and eggs.
- While stirring continuously, add the stem ginger and plums.
- Combine the 2 mixes until smooth.
- Divide the mixture evenly into your muffin cases.
- Place in an oven preheated to 400 F and bake for about 30 minutes.
