Irish Soda Bread

Ingredients

  • 3 Cups of Bread Flour
  • 2 Large Eggs (Beaten)
  • 1 Cup of Graham Flour
  • 1/2 Cup of Sugar
  • 1 1/3 Tablespoon of Salt
  • 1 1/3 Tablespoon of Butter
  • 1 1/2 Tablespoon of Baking Soda
  • 1 1/2 Cup Buttermilk
  • 2 Tablespoons of Dry Yeast
  • 1 Cup of Warm Water

Method

  1. Using a smallish bowl, combine the sugar, yeast and warm water. Let the yeast rise.
  2. Then, using a large bowl, mix together the flour, baking soda, salt and sugar. With a pastry blender cut in the butter until the mixture is smooth.
  3. In the bowl mix in the beaten eggs and stir in the buttermilk and soda.
  4. Mix the liquids and dry ingreditns together with a fork. Then on a board, gently knead the pastry for about 5 minutes to a good consistency.
  5. With you hands, shape the dough into a round ball. Place on a baking tray and let it rise for about 1 hour.
  6. Now you can shape it into a loaf. Then with a knife, cut a line 1/4" deep from corner to corner. Brush the top with melted butter.
  7. Place in a preheated over at 345F for between 40 - 45 minutes. Remove and let it cool down.
  8. Soda Bread is great when toasted or in an Ulster Fry.
