Ingredients

  • 1-1/2 lbs Lean Pork
  • 8 oz Pork Fat
  • 1 oz Breadcrumbs (White)
  • 1 tsp Salt
  • 1/2 tsp Allspice
  • Ground Pepper
  • Dried Sage
  • Ground Ginger

Method

  1. Thoroughly mince the meat and fat a couple of times, mix well and then season lightly.
  2. Add the herbs, as many as you like.
  3. Throw in breadcrumbs if you want them as well as the spices. (Both are optional)
  4. Use full skins.
