County Cork Irish Stew

Ingredients

  • 1 lb Potatoes
  • 2 cups Cabbage (Shredded)
  • 1-1/2 cup Peas
  • 1-1/2 cup Celery (Diced)
  • 1 tbl Vegetable Oil
  • 12 White Onions
  • 8 Lamb Chops
  • 1 Leek (Sliced)
  • Seasoning

Method

  1. First of all, season the lamb chops with salt and pepper.
  2. Heat some oil in a saucepan wide enough to hold all the chops without overlapping. Brown the chops on both sides.
  3. Remove any melted fat using a spoon and then add enough water to cover chops.
  4. Next, bring to a boil and add in the parsley, bay leaf, peppercorns, thyme and rosemary enclosed in cheesecloth. Then reduce heat to allow a simmer.
  5. While the herbs simmer, quarter the potatoes. Add them along with the cabbage, onion, leek, white onions and celery to the chops and liquid.
  6. Allow to simmer for around 20 minutes and add the peas.
  7. If more water is needed during cooking, add it. Let it simmer for a further 10 minutes so the potatoes soften up.
  8. Add a little seasoning to your orwn taste. Garmish with a sprinkling of freshly cut parsley, then serve piping hot.
