County Cork Irish Stew
Ingredients
- 1 lb Potatoes
- 2 cups Cabbage (Shredded)
- 1-1/2 cup Peas
- 1-1/2 cup Celery (Diced)
- 1 tbl Vegetable Oil
- 12 White Onions
- 8 Lamb Chops
- 1 Leek (Sliced)
- Seasoning
Method
- First of all, season the lamb chops with salt and pepper.
- Heat some oil in a saucepan wide enough to hold all the chops without overlapping. Brown the chops on both sides.
- Remove any melted fat using a spoon and then add enough water to cover chops.
- Next, bring to a boil and add in the parsley, bay leaf, peppercorns, thyme and rosemary enclosed in cheesecloth. Then reduce heat to allow a simmer.
- While the herbs simmer, quarter the potatoes. Add them along with the cabbage, onion, leek, white onions and celery to the chops and liquid.
- Allow to simmer for around 20 minutes and add the peas.
- If more water is needed during cooking, add it. Let it simmer for a further 10 minutes so the potatoes soften up.
- Add a little seasoning to your orwn taste. Garmish with a sprinkling of freshly cut parsley, then serve piping hot.
