Colcannon

Ingredients

  • 2 lbs Potatoes
  • 4 oz Butter
  • 1/2 pt Milk
  • 1 Cabbage
  • 1 Onion

Method

  1. Peel and divide the potatoes, chop the onions and cabbage.
  2. Layer a saucepan with the potatoes and add the pinch of salt and pepper.
  3. Layer the onion and cabbage on top of the potatoes and add enough water to cover the mixture.
  4. Boil and then simmer for 15 to 20 minutes until the potatoes are cooked.
  5. Mash the mixture thoroughly adding the butter and milk to ensure a good consistency. Serve with meat, steak, sausages, etc.
