Chicken & Leek Pie Recipe

Mixture Ingredients

  • 6 cups Chicken (Chopped)
  • 2 cups Leeks (Chopped)
  • 1 cup Shortcrust Pastry
  • 1 cup Ham (Sliced)
  • 1 cup Onions (Chopped)
  • 3/4 cup Chicken Stock
  • 1/4 cup Double Cream
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 pinch Nutmeg (Ground)

Method

  1. Prepare the pastry according to instructions on the box.
  2. In a deep dish, layer the chopped chicken, leeks, ham, onion and sprinkle with salt, pepper and nutmeg.
  3. Pour over the chicken stock and cover with pastry.
  4. Make a small hole in the middle of the pie and brush the top with milk.
  5. Place in an oven preheated to 350 F and bake for 30 minutes.
  6. Remove from oven, heat the cream and pour down the hole.
  7. Slice and serve.
