Mediterranean Lamb Recipe
Ingredients
- 1 lb Lamb (Diced)
- 14 oz Chopped Tomatoes
- 14 oz Chick Peas
- 3/4 pt Water
- 1 tbl Vegetable Oil
- 1 tbl Tomato Puree
- 1/2 tsp Cinnamon
- 1/4 tsp Mixed Herbs
- 1 Onion (Sliced)
- 1 Garlic Clove (Crushed)
- 1 Green Pepper (Sliced)
- 1 Courgette (Sliced)
- Seasoning
- Flour
Method
- Toss the diced lamb in seasoned flour.
- Brown in a pan with a little oil.
- Remove the lamb and then saute the onions and garlic.
- Then add the lamb back into the pan.
- Add the mixed herbs and cinnamon.
- While stirring, add the tinned tomatoes, water and tomato puree.
- Cook in an oven preheated to 375° for an hour.
- Just before your time is up, add the pepper and courgette.
- When cooked add the chick peas and thoroughly stir, then cook for a few more minutes.
