Mediterranean Lamb Recipe

Ingredients

  • 1 lb Lamb (Diced)
  • 14 oz Chopped Tomatoes
  • 14 oz Chick Peas
  • 3/4 pt Water
  • 1 tbl Vegetable Oil
  • 1 tbl Tomato Puree
  • 1/2 tsp Cinnamon
  • 1/4 tsp Mixed Herbs
  • 1 Onion (Sliced)
  • 1 Garlic Clove (Crushed)
  • 1 Green Pepper (Sliced)
  • 1 Courgette (Sliced)
  • Seasoning
  • Flour

Method

  1. Toss the diced lamb in seasoned flour.
  2. Brown in a pan with a little oil.
  3. Remove the lamb and then saute the onions and garlic.
  4. Then add the lamb back into the pan.
  5. Add the mixed herbs and cinnamon.
  6. While stirring, add the tinned tomatoes, water and tomato puree.
  7. Cook in an oven preheated to 375° for an hour.
  8. Just before your time is up, add the pepper and courgette.
  9. When cooked add the chick peas and thoroughly stir, then cook for a few more minutes.
