Ingredients

  • 1 lb Lamb Kidneys
  • 8 oz Mushrooms
  • 5 oz Natural Yoghurt
  • 4 oz Onions (Chopped)
  • 1/2 pt Beef Stock
  • 1 tbl Sunflower Oil
  • 1/2 Red Pepper
  • Seasoning

Method

  1. Place the lamb kidneys under a hot grill.
  2. Brown each side of the lamb kidneys.
  3. Take a pan over a steady heat and warm some oil.
  4. Add the peppers and onions and cook until softened.
  5. Remove to a casserole.
  6. Add the mushrooms, kidneys, stock and seasoning.
  7. Place in an oven preheated to 400° for about 45 minutes.
  8. Just before serving, stir in the natural yoghurt.
  9. Best served with rice and vegetables.
