Lamb's Kidney And Mushroom Casserole Recipe
Ingredients
- 1 lb Lamb Kidneys
- 8 oz Mushrooms
- 5 oz Natural Yoghurt
- 4 oz Onions (Chopped)
- 1/2 pt Beef Stock
- 1 tbl Sunflower Oil
- 1/2 Red Pepper
- Seasoning
Method
- Place the lamb kidneys under a hot grill.
- Brown each side of the lamb kidneys.
- Take a pan over a steady heat and warm some oil.
- Add the peppers and onions and cook until softened.
- Remove to a casserole.
- Add the mushrooms, kidneys, stock and seasoning.
- Place in an oven preheated to 400° for about 45 minutes.
- Just before serving, stir in the natural yoghurt.
- Best served with rice and vegetables.
