Ingredients

  • 6 Lamb Steaks
  • 1/4 pt Red Wine
  • 1/4 pt Orange Juice
  • 1/4 pt Lamb Stock
  • 6 Pickling Onions
  • 2 Garlic Cloves
  • Spring Rosemary

Method

  1. Take a frying pan, add the lamb steaks and fry until brown.
  2. Lift out into a casserole dish along with the onions, rosemary and garlic.
  3. Now pour the red wine, orange juice and lamb stock into the pan.
  4. Bring to the boil and then add a pinch of sugar and seasoning.
  5. Pour over the lamb steaks.
  6. Cook in an oven preheated to 350° until steaks are tender.
  7. Just before you serve the meal, thicken the sauce with a little cornstarch.
  8. Sprinkle with a little chopped mint to taste.
