Lamb Croquettes Recipe
Ingredients
- 2 cups Cooked Lamb (Diced)
- 1/2 cup Lamb Stock
- 1/2 cup Milk
- 3 tbl Butter
- 1 tbl Parsley (Chopped)
- 1 tbl Lemon Juice
- 1 tbl Onion (Chopped)
- 1 tbl Flour
- 1/4 tsp Salt
- 1 Egg (Beaten)
- Paprika
- Pepper
- Nutmeg
- Breadcrumbs
Method
- Combine the melted butter, flour, stock and milk.
- Cook over a steady heat until bubbling.
- While stirring, add the the diced lamb and seasoning to taste.
- Lift off the heat and chill.
- Wet your hands and roll the mixture into rolls.
- Brush the rolls with the beaten egg.
- Sprinkle the breadcrumbs on a flat surface and roll the logs.
- Deep fry the logs until brown.
- Serve hot with fresh vegetables.
