Lamb Croquettes Recipe

Ingredients

  • 2 cups Cooked Lamb (Diced)
  • 1/2 cup Lamb Stock
  • 1/2 cup Milk
  • 3 tbl Butter
  • 1 tbl Parsley (Chopped)
  • 1 tbl Lemon Juice
  • 1 tbl Onion (Chopped)
  • 1 tbl Flour
  • 1/4 tsp Salt
  • 1 Egg (Beaten)
  • Paprika
  • Pepper
  • Nutmeg
  • Breadcrumbs

Method

  1. Combine the melted butter, flour, stock and milk.
  2. Cook over a steady heat until bubbling.
  3. While stirring, add the the diced lamb and seasoning to taste.
  4. Lift off the heat and chill.
  5. Wet your hands and roll the mixture into rolls.
  6. Brush the rolls with the beaten egg.
  7. Sprinkle the breadcrumbs on a flat surface and roll the logs.
  8. Deep fry the logs until brown.
  9. Serve hot with fresh vegetables.
