Rhubarb Meringue Flan Recipe
Mixture Ingredients
- 11 oz Rhubarb (Chopped)
- 7 oz Flour
- 5 oz Butter (Softened)
- 5 oz Caster Sugar
- 1/2 oz Vanilla Sugar
- 2 tbl Double Cream
- 2 tsp Baking Powder
- 3 Eggs (Beaten)
Topping Ingredients
- 6 oz Sugar
- 3 tbl Chocolate (Grated)
- 3 Egg Whites
Method
- Take a mixing bowl and combine the sugar, beaten eggs, butter, vanilla sugar and salt until thick and smooth.
- Sift in the baking powder and flour while stirring.
- Fold in the doule cream while stirring.
- Pour the batter into a greased 9“ cake tin and top with the chopped rhubarb.
- Sprinkle generously with sugar.
- Place in an oven preheated to 350 F and bake for about 45 minutes or until brown.
- Lift out of the oven and put on a wire rack to cool.
- For the topping, take a mixing bowl and whisk the egg white and sugar until peaks form.
- Fold in the grated chocolate.
- Spread over the top of the flan.
- Bake at 350 F for another 15 minutes.
