Mixture Ingredients

  • 1 lb Apricots (Chopped)
  • 7 oz Flour
  • 4 oz Butter (Softened)
  • 4 oz Caster Sugar
  • 1 oz Almonds
  • 2 tsp Baking Powder
  • 1 tsp Lemon Zest (Grated)

Topping Ingredients

  • 1 tbl Sugar

Method

  1. Take a mixing bowl and combine the sugar, beaten eggs, butter, grated lemon zest and salt until thick and smooth.
  2. Sift in the baking powder and flour while stirring.
  3. Pour the batter into a greased 9“ cake tin.
  4. Press the chopped almonds onto the top and sprinkle with almonds.
  5. Place in an oven preheated to 350 F and bake for about 60 minutes or until brown.
  6. Lift out of the oven and put on a wire rack to cool.
  7. For the topping, sprinkle with sugar.
