Apple Cream Flan Recipe

Mixture Ingredients

  • 13 oz Flour
  • 7 fl oz Milk (Warm)
  • 2 oz Butter (Softened)
  • 1 oz Caster Sugar
  • 1 oz Yeast

Topping Ingredients

  • 34 lb Apples (Cored / Chopped)
  • 13 oz Pouring Cream
  • 4 oz Caster Sugar
  • 2 oz Currants
  • 3 Eggs (Beaten)
  • 1 tbl Icing Sugar
  • 1 Lemon

Method

  1. In a small bowl, combine the yeast with 1 tsp of sugar and leave aside.
  2. Take a mixing bowl and combine the salt, flour and caster sugar until a dough.
  3. Put the dough into the bottom of a greased 9“ baking tin and set aside.
  4. In another bowl, mix together the cored and chopped apples, currants and squeezed lemon juice.
  5. Put the fruit mixture into the tin also.
  6. Place in an oven preheated to 350 F and bake for about 30 minutes.
  7. Lift out of the oven and put on a wire rack to cool.
  8. For the topping, combine the beaten eggs and icing sugar until peaks form.
  9. Pour over the top of the flan.
  10. Bake at 350 F for a further 40 minutes before serving.
