Almond Flan Recipe
Mixture Ingredients
- 9 oz Caster Sugar
- 9 oz Butter (Softened)
- 9 oz Flour
- 9 oz Almonds (Ground)
- 1 tsp Cinnamon
- 1 tsp Baking Powder
- 1 tsp Lemon Zest (Grated)
- 2 Eggs (Beaten)
- 1 Egg White
Topping Ingredients
- 9 oz Blackcurrant Jam
- 2 tbl Almond Flakes
- 1 Egg Yolk
Method
- Take a mixing bowl and combine the sugar, beaten eggs, egg white, cinnamon, ground almonds and salt until thick and smooth.
- Sift in the baking powder and flour while stirring.
- Pour 2/3 of the batter into a greased 9“ cake tin and the rest into a piper.
- Pipe a decorative border around the top of the flan.
- Brush the top with beaten egg and sprinkle with ground almonds.
- Place in an oven preheated to 350 F and bake for about 75 minutes or until brown.
- Lift out of the oven and put on a wire rack to cool.
