Mixture Ingredients

  • 9 oz Caster Sugar
  • 9 oz Butter (Softened)
  • 9 oz Flour
  • 9 oz Almonds (Ground)
  • 1 tsp Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Lemon Zest (Grated)
  • 2 Eggs (Beaten)
  • 1 Egg White

Topping Ingredients

  • 9 oz Blackcurrant Jam
  • 2 tbl Almond Flakes
  • 1 Egg Yolk

Method

  1. Take a mixing bowl and combine the sugar, beaten eggs, egg white, cinnamon, ground almonds and salt until thick and smooth.
  2. Sift in the baking powder and flour while stirring.
  3. Pour 2/3 of the batter into a greased 9“ cake tin and the rest into a piper.
  4. Pipe a decorative border around the top of the flan.
  5. Brush the top with beaten egg and sprinkle with ground almonds.
  6. Place in an oven preheated to 350 F and bake for about 75 minutes or until brown.
  7. Lift out of the oven and put on a wire rack to cool.
