Trout Steaks In Wine Sauce With Button Mushrooms Recipe
Ingredients
- 4 Trout Steaks
- 8 oz Button Mushrooms
- 3 oz Butter
- 3/4 pt Fish Stock
- 1/4 pt Double Cream
- 1/4 pt Dry White Wine
- Seasoning
- Dill
Method
- Poach the trout in the dry white wine and fish stock for about 5 minutes.
- Strain off the liquid and then reduce it until it becomes thick and syrupy.
- Remove the fish skin.
- Gently saute the button mushrooms using 1 oz of butter.
- When the liquid has been reduced, remove from heat and stir in the butter and cream.
- Add seasoning to taste.
- Present the trout and mushrooms on a dish, then pour over the sauce.
- You can then garnish with dill.
