Ingredients

  • 4 Trout Steaks
  • 8 oz Button Mushrooms
  • 3 oz Butter
  • 3/4 pt Fish Stock
  • 1/4 pt Double Cream
  • 1/4 pt Dry White Wine
  • Seasoning
  • Dill

Method

  1. Poach the trout in the dry white wine and fish stock for about 5 minutes.
  2. Strain off the liquid and then reduce it until it becomes thick and syrupy.
  3. Remove the fish skin.
  4. Gently saute the button mushrooms using 1 oz of butter.
  5. When the liquid has been reduced, remove from heat and stir in the butter and cream.
  6. Add seasoning to taste.
  7. Present the trout and mushrooms on a dish, then pour over the sauce.
  8. You can then garnish with dill.
