Ingredients

  • 12 oz Haddock Fillet (Chopped)
  • 2 oz Wholewheat Breadcrumbs
  • 4 tbl Parsley (Chopped)
  • 3 Bananas (Pureed)
  • 1/2 Lemon Rind
  • Seasoning

Sauce Ingredients

  • 4 fl oz White Wine Vinegar
  • 4 tbl Honey
  • 3 tbl Soy Sauce
  • 3 tbl Orange Juice
  • 3 tbl Tomato Puree
  • 2 tsp Wholegrain Mustard

Method

  1. In a mixing bowl, combine the haddock, mashed banana, chopped parsley, breadcrumbs, lemon rind and seasoning.
  2. Once well combined and thickened, cover with film and refridgerate for 30 minutes.
  3. For the sauce, combine the white wine vinegar, honey, soy sauce, orange juice, tomato puree and wholegrain mustard in a saucepan over a steady heat.
  4. Cover your hands in flour and create small fish balls.
  5. Put the fish balls in the sauce and let them simmer for about 10 minutes.
  6. Can be served with rice or noodles.
