Sweet & Sour Fish Balls Recipe
Ingredients
- 12 oz Haddock Fillet (Chopped)
- 2 oz Wholewheat Breadcrumbs
- 4 tbl Parsley (Chopped)
- 3 Bananas (Pureed)
- 1/2 Lemon Rind
- Seasoning
Sauce Ingredients
- 4 fl oz White Wine Vinegar
- 4 tbl Honey
- 3 tbl Soy Sauce
- 3 tbl Orange Juice
- 3 tbl Tomato Puree
- 2 tsp Wholegrain Mustard
Method
- In a mixing bowl, combine the haddock, mashed banana, chopped parsley, breadcrumbs, lemon rind and seasoning.
- Once well combined and thickened, cover with film and refridgerate for 30 minutes.
- For the sauce, combine the white wine vinegar, honey, soy sauce, orange juice, tomato puree and wholegrain mustard in a saucepan over a steady heat.
- Cover your hands in flour and create small fish balls.
- Put the fish balls in the sauce and let them simmer for about 10 minutes.
- Can be served with rice or noodles.
