Ingredients

  • 8 oz Cod (Cubed)
  • 8 oz Smoked Haddock (Cubed)
  • 4 oz Cheddar Cheese (Grated)
  • 4 oz Cooked Prawns (Peeled)
  • 3 oz Wholemeal Breadcrumbs
  • 1/2 pt Milk
  • 2 tbl Parsley (Chopped)
  • 1/2 tsp Nutmeg (Ground)
  • 1 Bay Leaf
  • 1 Onion (Chopped)
  • Black Pepper (Ground)

Method

  1. In a saucepan, poach the smoked haddock and cod along with the chopped onion and bay leaf in the milk for 3 minutes.
  2. Lift the fish and onion out of the saucepan and place in an ovenproof dish.
  3. Sprinkle the fish with the prepared prawns.
  4. Add the butter and flour flour to the sauce in the pan, stirring well.
  5. Now season well, add the chopped parsley and then the cheese.
  6. When well combined, pour over the fish.
  7. Now cover with breadcrumbs.
  8. Place in an oven preheated to 350 F an bake for 25 minutes, or until brown.
