Mixture Ingredients

  • 1 lb Salmon
  • 3 oz Breadcrumbs
  • 2 oz Butter
  • 1 tin Asparagus Tips (Chopped)

Sauce Ingredients

  • 2 oz Flour
  • 2 oz Butter
  • 1 pt Milk
  • 2 tbl Sherry
  • Seasoning

Method

  1. Poach the salmon and flake.
  2. In a saucepan over a steady heat, combine the flour, butter, milk and sherry.
  3. Season the sauce to taste while stirring.
  4. Lay the asparagus over the bottom of an ovenproof dish.
  5. Layer the salmon flakes over the top of the asparagus.
  6. Now pour the white sauce over the salmon.
  7. Melt the butter in a saucepan and combine with the breadcrumbs.
  8. Sprinkle the breadcrums mix over the white sauce.
  9. Place in an oven preheated to 350 F and bake until brown.
