Ingredients

  • 2 medium Trout
  • 2 rashers Bacon (Chopped)
  • 2 stalks Celery (Chopped)
  • 1 Onion (Chopped)
  • 1 Carrot (Chopped)
  • 1/2 Green Pepper (Chopped)
  • 1/4 pt White Wine

Method

  1. Fry the chopped bacon in a frying pan until brown.
  2. Then add the chopped vegetables and cook until softened.
  3. Wash and dry the trout, then place over the vegetables.
  4. Add a cup of white wine, then cover the pan and cook for 15 minutes.
  5. Serve on a heated dish.
  6. Spoon the cooked vegetables and sauces over the trout.
  7. Season with freshly ground black pepper and salt.
  8. Garnish with lemon slices.
