Kedgeree Salad Recipe
Ingredients
- 1 lb Smoked Haddock (Filleted / Boned)
- 6 oz Long Grain Rice (Cooked)
- 2 slices Bacon (Cooked / Chopped)
- 2 Boiled Eggs (Chopped)
- 4 Tomatoes (Chopped)
- 1 Green Pepper (Chopped / Blanched)
- 1 can Pineapple (chopped)
- Mayonnaise
- Parsley
Method
- Cut the haddock into bite-sized pieces.
- Place the fish in cold unsalted water to which a bay leaf and lemon slice have been added.
- Simmer for about 10 minutes, then drain well and allow to cool.
- Combine the fish, rice and other ingredients excet the mayonnaise.
- Season to taste with some ground black pepper.
- Use the mayonnaise to bind.
- Place a circle of pineapple pieces in the base of a bowl.
- pile in firmly and turn onto a serving dish.
- Use tomato wedges to garnish around the base.
- Sprinkle with chopped parsley.
