Fish Cardinal Recipe
Ingredients
- 1 lb Cod
- 1/4 pt Mayonnaise
- 4 tbl Double Cream (Whipped)
- 2 tbl Tomato Puree
- 2 tsp Lemon Juice
- 2 tsp Worchester Sauce
Method
- Poach the cod for 10 minutes or until just cooked and no more.
- Add a squeeze of lemon juice and season well.
- Let the fish cool, then remove and flake. Thoroughly remove any bones.
- In a mixer, combine the tomato puree, lemon juice and worchester sauce.
- Fold in the whipped double cream.
- Gradually add the flaked cod while stirring.
- Serve with side salad.
