Ingredients

  • 1 lb Cod
  • 1/4 pt Mayonnaise
  • 4 tbl Double Cream (Whipped)
  • 2 tbl Tomato Puree
  • 2 tsp Lemon Juice
  • 2 tsp Worchester Sauce

Method

  1. Poach the cod for 10 minutes or until just cooked and no more.
  2. Add a squeeze of lemon juice and season well.
  3. Let the fish cool, then remove and flake. Thoroughly remove any bones.
  4. In a mixer, combine the tomato puree, lemon juice and worchester sauce.
  5. Fold in the whipped double cream.
  6. Gradually add the flaked cod while stirring.
  7. Serve with side salad.
