Ingredients

  • 1 lb White Fish
  • 1 oz Butter
  • 1/2 pt Hot Water
  • 1/4 pt Milk
  • 1 tbl Parsley (Chopped)
  • 1 can Tomatoes (Chopped)
  • 2 Garlic Cloves (Crushed)
  • 1 Onion (Diced)
  • 1 sachet Bouquet Garni
  • Seasoning

Method

  1. Cut the white fish into even pieces.
  2. Melt the butter and sweat the onion, potatoes and crushed garlic for about 5 minutes.
  3. Add the can of chopped tomatoes, seasoning, hot water and bouquet garni.
  4. Bring to the boil and let simmer for about 15 minutes.
  5. Add the fish pieces and cook for another 15 minutes.
  6. Add the milk and stir, lowering the heat.
  7. Sprinkle with chopped parsley.
  8. Serve with fresh bread.
