Ingredients

  • 1-1/2 lb Cod Fillet
  • 1 lb Tomatoes (Sliced)
  • 4 tbl Oil
  • 1 tbl Parsley (Chopped)
  • 1 Onion (Chopped)
  • 1 Garlic Clove (Crushed)
  • Seasoning

Method

  1. Put the flour and seasoning into a bowl and mix.
  2. Cut the cod fillets into 2“ squares and roll through the flour.
  3. Heat a frying pan and add oil.
  4. Fry the cod squares for about 10 minutes, making sure to turn over.
  5. Now lift the cod squares into a small bowl.
  6. Leave about 1/4 of the oil in the saucepan, this is the sauce base.
  7. Fry the chopped onion in the oil, then add the chopped parsley, tomatoes and crushed garlic.
  8. Cook in the frying pan for about 5 minutes, then pour over the fish.
  9. Can be served with salads, rice or potatoes.
