Bread and Butter Pudding Recipe

Ingredients

  • 2 oz Butter (Softened)
  • 2 oz Sultanas
  • 3/4 pt Milk
  • 3 tbl Caster Sugar
  • 2 Eggs (Beaten)
  • 1 Gluten Free Loaf (White / Sliced / Crusts Removed)
  • 1 pinch Nutmeg (Ground)

Method

  1. Spread each slice of bread with a thick layer of butter, then cut into triangles and layer on the bottom of an ovenproof dish.
  2. Sprinkle liberally with half the lemon rind and sultanas.
  3. Cover with the rest of the bread, buttered side up.
  4. In a bowl, combine the eggs, nutmeg, sugar and milk.
  5. Pour the mixture over the bread and sprinkle with the remaining lemon rind.
  6. Place in an oven preheated to 350 F and bake for about 60 minutes.
