Easter Cookies Recipe
Ingredients
- 4 oz Plain Flour
- 2 oz Currants
- 2 oz Caster Sugar
- 2 oz Butter
- 1 oz Granulated Sugar
- 1 tsp Caraway Seeds
- 1 Egg Yolk
- 1/2 Lemon Zest
Method
- Take a large bowl and cream together the egg yolk, caster sugar, lemon zest and butter.
- Using a spatula, fold in the caraway seeds, flour and currants.
- Roll out onto a floured board and cut into round circles about 1/4' deep.
- Place in an oven preheated to 350 F and bake for about 15 minutes.
- Refridgerate.
