Easter Cookies Recipe

Ingredients

• 4 oz Plain Flour
• 2 oz Currants
• 2 oz Caster Sugar
• 2 oz Butter
• 1 oz Granulated Sugar
• 1 tsp Caraway Seeds
• 1 Egg Yolk
• 1/2 Lemon Zest

Method

1. Take a large bowl and cream together the egg yolk, caster sugar, lemon zest and butter.
2. Using a spatula, fold in the caraway seeds, flour and currants.
3. Roll out onto a floured board and cut into round circles about 1/4' deep.
4. Place in an oven preheated to 350 F and bake for about 15 minutes.
5. Refridgerate.
