Amaretto Cookie Recipe

Ingredients

• 2 cups Pastry Flour
• 1 cup Almonds (Roasted / Ground)
• 1/2 cup Butter
• 1/2 cup Amaretto Liqueur
• 2 tbl Molasses
• 1 tsp Almond Extract
• 1/2 tsp Lemon Rind (Grated)
• 2 Eggs

Method

1. In a large bowl, cream the molasses and butter together.
2. Then add the eggs, almond extract and lemon rind. Mix thoroughly.
3. While stirring gently, add the amaretto liqueur.
4. Using unoiled cookie sheets, drop on a teaspoon of the mixture at a time.
5. Place in an oven preheated to 350 F and bake for about 15 minutes.
