Soft Chocolate Chip Cookies Recipe
Ingredients
- 2-1/2 cups Oats (Rolled)
- 2 cups Flour
- 1-1/2 cup Pecan Nuts (Chopped)
- 1 cup White Sugar
- 1 cup Demerera Sugar
- 1 cup Butter (Softened)
- 1 cup Chocolate Chips
- 1 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 2 Eggs (Beaten)
- 1 Chocolate Bar (Grated)
Method
- Cream the demerera sugar, white sugar, vanilla extract and beaten eggs in a mixing bowl.
- Using another bowl, stir together the baking powder, baking soda, salt and oats.
- While stirring, gradually sift in the flour.
- Pour the flour mixture into a blender and whisk until a powder.
- Gradually pour in the creamed mixture while blending at a medium speed.
- Pour the blended mix into a bowl.
- Fold in the chopped pecan nuts, grated chocolate bar and the chocolate chips. Stir well.
- Spoon large dollups of the mix onto a greased baking sheet.
- Place in an oven preheated to 350 F and bake for about 10 minutes.
- Lift out and place the cookies on a wire rack to cool.
