Soft Chocolate Chip Cookies Recipe

Ingredients

  • 2-1/2 cups Oats (Rolled)
  • 2 cups Flour
  • 1-1/2 cup Pecan Nuts (Chopped)
  • 1 cup White Sugar
  • 1 cup Demerera Sugar
  • 1 cup Butter (Softened)
  • 1 cup Chocolate Chips
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 Eggs (Beaten)
  • 1 Chocolate Bar (Grated)

Method

  1. Cream the demerera sugar, white sugar, vanilla extract and beaten eggs in a mixing bowl.
  2. Using another bowl, stir together the baking powder, baking soda, salt and oats.
  3. While stirring, gradually sift in the flour.
  4. Pour the flour mixture into a blender and whisk until a powder.
  5. Gradually pour in the creamed mixture while blending at a medium speed.
  6. Pour the blended mix into a bowl.
  7. Fold in the chopped pecan nuts, grated chocolate bar and the chocolate chips. Stir well.
  8. Spoon large dollups of the mix onto a greased baking sheet.
  9. Place in an oven preheated to 350 F and bake for about 10 minutes.
  10. Lift out and place the cookies on a wire rack to cool.
