Oatmeal Chocolate Chip Cookies Recipe
Ingredients
- 2 cups Oats (Rolled)
- 2 cups Chocolate Chips
- 1-1/2 cups Flour
- 1 cup Pecan Nuts (Chopped)
- 1 cup Shortening
- 3/4 cup Demerera Sugar
- 3/4 cup White Sugar
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- 1 tsp Salt
- 2 Eggs (Beaten)
Method
- Cream the demerera sugar, white sugar and shortening in a large mixing bowl.
- Once well combined, gradually add the beaten eggs and vanilla extract.
- Beat the mixture until light and fluffy.
- Gently fold in the chopped pecan nuts, rolled oats and chocolate chips.
- Drop spoonfuls of the chocolate chip mix onto a greased baking sheet.
- Place in an oven preheated to 350 F and bake for about 10 minutes until brown.
- Lift out and onto a wire rack to cool.
