Chocolate Chip & Fruit Cookies Recipe
Ingredients
- 2 cups Flour
- 1-1/2 cups Oats
- 1 cup Chocolate Chips
- 1 cup Toffee Pieces
- 3/4 cup Demerera Sugar
- 3/4 cup White Sugar
- 1/2 cup Butter (Softened)
- 1/4 cup Cranberries (Dried)
- 1/4 cup Walnuts (Chopped)
- 1/4 cup Raisins
- 1/4 cup Dates (Chopped)
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- 1 Egg (Beaten)
- 1 pinch Salt
Method
- In a bowl, sift together the baking soda, salt and flour.
- Add the cranberries, raisins, dates and chopped walnuts.
- Mix the ingredients together well and set aside for later.
- Cream the butter, demerera sugar, white sugar, vanilla extract and beaten egg in another bowl.
- Gradually add the flour mixture and oats while stirring.
- Gently fold in the chocolate chips and toffee pieces.
- Cover and refridgerate for 120 minutes.
- Remove from cooling and drop spoonfuls of mix onto a greased baking sheet.
- Place in an oven preheated to 350 F and bake for 10 minutes.
- Lift out and cool on a wire rack.
