Ingredients

  • 2 cups Flour
  • 1-1/2 cups Oats
  • 1 cup Chocolate Chips
  • 1 cup Toffee Pieces
  • 3/4 cup Demerera Sugar
  • 3/4 cup White Sugar
  • 1/2 cup Butter (Softened)
  • 1/4 cup Cranberries (Dried)
  • 1/4 cup Walnuts (Chopped)
  • 1/4 cup Raisins
  • 1/4 cup Dates (Chopped)
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1 Egg (Beaten)
  • 1 pinch Salt

Method

  1. In a bowl, sift together the baking soda, salt and flour.
  2. Add the cranberries, raisins, dates and chopped walnuts.
  3. Mix the ingredients together well and set aside for later.
  4. Cream the butter, demerera sugar, white sugar, vanilla extract and beaten egg in another bowl.
  5. Gradually add the flour mixture and oats while stirring.
  6. Gently fold in the chocolate chips and toffee pieces.
  7. Cover and refridgerate for 120 minutes.
  8. Remove from cooling and drop spoonfuls of mix onto a greased baking sheet.
  9. Place in an oven preheated to 350 F and bake for 10 minutes.
  10. Lift out and cool on a wire rack.
