Chocolate Chip Biscotti Recipe

Ingredients

  • 1 cup Flour
  • 1/2 cup Chocolate Chips
  • 1/2 cup White Sugar
  • 1/2 cup Pecan Nuts (Chopped)
  • 1/4 cup Cocoa Powder
  • 2 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 2 Eggs (Beaten)

Method

  1. Combine the cocoa powder, sugar, salt, chopped pecan nuts and flour in a blender.
  2. Using another mixing bowl, cream the beaten eggs with the vanilla extract until it thickens and peaks form.
  3. Gradually fold in the chocolate chips and nut mixture.
  4. Scoop the mixture out and onto a floured board.
  5. Split the mixture in half and roll into 2 foot-long rolls.
  6. Put both rolls onto a greased baking tray.
  7. Place in an oven preheated to 350 F and bake for 30 minutes.
  8. After removing from the oven, cut each roll into thick slices.
  9. Put the slices back into the oven for a further 10 minutes.
  10. Lift out, cool on a wire rack and store.
