Chocolate Chip Biscotti Recipe
Ingredients
- 1 cup Flour
- 1/2 cup Chocolate Chips
- 1/2 cup White Sugar
- 1/2 cup Pecan Nuts (Chopped)
- 1/4 cup Cocoa Powder
- 2 tsp Vanilla Extract
- 1/4 tsp Salt
- 2 Eggs (Beaten)
Method
- Combine the cocoa powder, sugar, salt, chopped pecan nuts and flour in a blender.
- Using another mixing bowl, cream the beaten eggs with the vanilla extract until it thickens and peaks form.
- Gradually fold in the chocolate chips and nut mixture.
- Scoop the mixture out and onto a floured board.
- Split the mixture in half and roll into 2 foot-long rolls.
- Put both rolls onto a greased baking tray.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- After removing from the oven, cut each roll into thick slices.
Put the slices back into the oven for a further 10 minutes.
- Lift out, cool on a wire rack and store.
