Chocolate Biscotti Recipe

Ingredients

  • 3-1/4 cups Flour
  • 1-3/4 cups White Sugar
  • 1 cup Almonds (Chopped)
  • 1 cup Chocolate Chips
  • 3/4 cup Butter (Softened)
  • 1/2 cup Cocoa Powder
  • 2 tbl Coffee Liqueur
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 4 Eggs (Beaten)
  • 1 Lemon Zest

Method

  1. Combine the cocoa powder, baking powder, salt, flour, half the sugar and softened butter in a large bowl.
  2. Stir the mixture until thickened.
  3. Fold in the beaten eggs, lemon zest and coffee liqueur.
  4. While stirring, gradually add the chopped almonds and chocolate chips.
  5. Use the remaining white sugar to sprinkle over a rolling board.
  6. Split the mix in half and roll each half out to a foot long roll.
  7. Carefully put both rolls onto a greased baking tray.
  8. Place in an oven preheated to 350 F and bake for 30 minutes.
  9. Lift the rolls out of the oven and cut with a sharp knife.
  10. Toast the sliced gently in the oven for a further 10 minutes.
  11. Lift out, cool on a wire rack and store.
