Chocolate Biscotti Recipe
Ingredients
- 3-1/4 cups Flour
- 1-3/4 cups White Sugar
- 1 cup Almonds (Chopped)
- 1 cup Chocolate Chips
- 3/4 cup Butter (Softened)
- 1/2 cup Cocoa Powder
- 2 tbl Coffee Liqueur
- 2 tsp Baking Powder
- 1 tsp Salt
- 4 Eggs (Beaten)
- 1 Lemon Zest
Method
- Combine the cocoa powder, baking powder, salt, flour, half the sugar and softened butter in a large bowl.
- Stir the mixture until thickened.
- Fold in the beaten eggs, lemon zest and coffee liqueur.
- While stirring, gradually add the chopped almonds and chocolate chips.
- Use the remaining white sugar to sprinkle over a rolling board.
- Split the mix in half and roll each half out to a foot long roll.
- Carefully put both rolls onto a greased baking tray.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Lift the rolls out of the oven and cut with a sharp knife.
- Toast the sliced gently in the oven for a further 10 minutes.
- Lift out, cool on a wire rack and store.
