Polynesian Chicken Recipe
Ingredients
- 6 large Chicken Breasts (Boned / Skinned)
- 1/2 cup vegetable Oil
- 1 can Pineapple (Crushed)
- 1 can Chicken Broth
- 1 tbl Cornstarch
- 1 tbl Curry Powder
- 4 Celery Stalks (Sliced)
- 1 Onion (Chopped)
- Black Pepper
- Sea Salt
Method
- Take a large oiled frying pan and fry the chicken breasts until they are cooked through.
- Remove the chicken from the pan and most of oil, leaving about 2 tbl of oil.
- Reduce the heat a little and add the curry powder to cook for a minute or so.
- Add the sliced celery and onions and cook through.
- Now add the chicken broth and pineapple chunks.
- Stir the mixture and season.
- Let the mixture simmer on a low heat for a few minutes.
- Put the chicken back in, cover the pan and let simmer for about 45 minutes.
- Remove the chicken again.
- Take a small mixing bowl and mix a little water with the cornstarch.
- Add the cornstarch to the pan and stir until it thickens a little.
- Put the chicken on the plates and serve with the sauce and rice.
